  5. Provide 1 tbsp of Groundnut powder.
  6. Take 2-3 of Tamarind soaked.
  7. Provide 1 tbsp of Jaggery.
  8. Prepare 1/2 tbsp of Turmeric powder.

  10. You need 1/2 tbsp of Coriander seeds.
  11. Prepare pinch of Asafoetida or hing powder.

  14. Get of Soak 2-3 tamarind in hot or warm water for atleast 15 minutes.

  1. Cut bitter gourd in thin round slices and apply salt over it and leave it for 4-5 hours or overnight. This way it will release water and the bitterness will reduce to some extent..
  2. Fry the bitter gourd slices. It should turn reddish and look crispy..
  3. Remove this from the kadai and then remove extra oil and make tadka with coriander seeds, jeera, turmeric powder and hing and again add bitter gourd slices in it..
  4. Stir fry for a minute and then add groundnut powder and seasame seeds powder. Add tamarind pulp and jaggery into it..
  5. Add garam masala, red chilli powder. Add less or no salt as per your taste as we have already coated slices with salt before. Add 2 cups water..
  6. Cover and let cook for 4-5 minutes..
  7. Remove the cover and let water evaporate bit as per your gravy requirements..
  8. The curry is ready. As we have fried it before, it tastes delicious and is still crunchy even after cooking. Serve with roti or rice..
